Sometimes you just need a little crunch in your life! These low carb tortilla crackers fit the bill.
Ingredients:
- Low carb tortillas
- Cooking spray of your choice
- salt, cracked black pepper, herbs (such as dried parsley) and/or parmesan cheese for flavor
Directions:
Preheat the oven to 400 degrees. Get out a cutting board, the tortillas, and a large knife or pizza cutter.
Stack up your tortillas about 5 or 6 tortillas high.
Using your pizza cutter or a large knife, cut the tortilla stacks into 6 or 8 pie-shaped wedges.
You could cut them into different shapes, if you please, but this uses every little square inch, and that’s a good thing. Waste not, want not.
Spread them out on large cookie sheets. Spray lightly with cooking spray.
Sprinkle with your choice or seasonings, or leave plain. I usually make a variety when I make them.
Bake for approximately 7 minutes in your preheated oven, until crisp.
Allow to cool completely before you bag them up. If you don’t, they will pout and lose their crispness.
Make the most of your oven time. Do a big batch. They keep for weeks, if sealed in a baggie.
