Aren’t these adorable little egg cups? I can always use a little boost in the morning. Egg provides the protein, but the egg cups they’re served in bring the smiles.
The quickest way for me to have a cute and nutritious breakfast is to start the night before.
I cook my eggs. You can boil them on the stovetop, but I prefer to use my handy microwave egg cooker or portable electric egg cooker. Feel free to use the method that suits you. I cook the eggs, cool them by running cold water over them to stop the cooking, then peel before wrapping in plastic wrap and refrigerating.
The next morning, I cut the top 1/4 of the egg off, scoop out the yolk, and mix it with a little salt, pepper, butter, american cheese, and minced parsley. I microwave the empty eggwhite hull for about 10 seconds, then I take that off the plate and put the “filling” in to microwave for 8 seconds before spooning the filling back into the egg and placing it into my little egg server.
Depending upon your taste, you may wish to mix in a little crumbled bacon, some onion, minced bell pepper, mushroom. It is like an omelette without the omelette.
