Use the ingredients and instructions for the Lime Coconut Cookies. Once you have baked the cookies, while they are still warm, follow the directions below (and additional ingredients below) to make the Lime Coconut Tarts.”
- Whipped Cream (make it or buy it)
- Zest of one lime
- Fresh raspberries, blueberries, or strawberry slices for garnish
Break the cookies apart, tearing off the brown bottom. Roll into a 1 inch ball. If you have one of those tart maker things (all you veterans of Pampered Chef parties…) dip it in a little Splenda or sugar and you will use it to mash the balls into paper-lined mini muffin pans.
If you don’t have the little tool, just mold the tart shells by hand into the paper-lined mini-muffin pans. Allow them to sit for a few minutes — or chill them to get them to set up quickly. Fill the tart shells with whipped cream and top with a little piece of fruit and a tiny amount of lime zest.
