Ingredients: This is one of those salads where you can clean out your vegetable drawer! Use whatever strikes your fancy. The picture above shows what I happened to have on hand that particular day, but the list below shows an even wider range of possibilities.
- Mixed greens
- Yellow squash
- Cheese — cheddar, bleu, feta
- Sliced or diced colored peppers
- Hard-boiled egg
- Fruit – strawberries, blueberries, craisins
- Red onion or green onions
- Purple cabbage
- French Fried Onions
Toss together. Top with the dressing of your choice. Try using creative cuts on the vegetables. The carrots here were done by using the Kiwi Thai vegetable peeler to create the scalloped edge on the outside, then very thinly slicing the carrot on a diagonal.
Use the Kiwi Thai peeler to make scalloped edges on your carrot, then slice it thin. Here, I have combined it with thinly sliced radishes and my Five Spice Nuts. I added 10 mashed raspberries and a finely diced shallot to the Essential Vinaigrette and let it sit for about an hour before dressing the salad with it.
